The experience was exquisite like no other. The attention to detail and the amount of sheer preparation can be tasted in each piece. I've read other reviews complaining about the price but what they fail to understand is that there is a huge cost that comes with such finely sourced ingredients. Even simple ingredients like seaweed is sourced from a small town and that's not even the fish. Some people also complained that they don't treat foreigners well but we don't speak a lick of Japanese and they treated us so nicely, going as far as walking us out the door when we left. It's no wonder they are iffy about making reservations for non-regulars. As I'm enjoying my fabulous meal there are 4 prepared seats for people who didn't show. For a restaurant that seats so few and has such limited time slots that's devastating especially when running costs are so high. Bottom line is that it was an unforgettable experience that was worth every penny. Just like an opera isn't for everyone, it takes a certain audience to fully enjoy this sushi.

I called trying to make a reservation tonight, and was told that because I was a foreigner I would need to make a reservation through my hotel or my credit card's concierge service. I explained (in Japanese) that I've lived in Japan for 23 years and am a permanent resident, and that as I don't have a platinum card I'm unable to use Visa's concierge service. They told me I'm out of luck. Truly despicable.

The best sushi experience in my life. Once in a life time I recommend to visit this restaurant. Mr. Mizutani redefined my sushi world.

I agree with another reviewer: one of the best culinary experiences of my life.

I went here with three friends on a Friday night. We made the reservation through our hotel. It's in Ginza on smaller alley with many other shops/restaurants nearby.

The ambiance is low-key but classy in a classic interior bar/restaurant Tokyo way: fine custom woodwork on the walls and ceilings, minimalist, great lighting, low ceiling, no windows.

Mizutani was an apprentice of Jiro, and his serving style and attitude reminded me a lot of the famous documentary. Hand-made individual pieces of sushi prepared and eaten quickly, one right after the other. Mizutani himself was amicable but didn't speak much English.

My favorite piece was the final one, the eel. Soft, rich, kind of sweet. My least favorite was the sea urchin. It was also soft but the flavor and texture were off-putting, at least for me. Must be an acquired taste. The squid was also notable -- not rubbery but quite firm.

For me, the most unexpectedly delightful part of the meal was the visual beauty of the sushi. Each piece looked like it could have been in an art museum. Unfortunately, he won't let you take pictures during the meal.

Service was attentive and amicable but not overbearing or exceedingly polite, which one might expect in Japan.

This is one of the greatest culinary experiences of my life, and redefined sushi for me. The care and process he uses to craft this food proves that Hachiro Mizutani has earned his reputation.
